Dr. Pepper London Broil Pot Roast + Honey Glazed Carrots + Smashed Potatoes

Last nights dinner was soo good. I wanted a healthy but heart comfort food type dinner, it’s been awhile.

My London broil pot roast had little to no fat on it, so it was perfect to cook in the crock pot and the carrots and smashed potatoes as sides were easy and quick to cook up.


Dr. Pepper Roast + Honey Glazed Carrots + Smashed Potatoes

Dr. Pepper London Broil Pot Roast


2.5 lb London Broul Pot Roast

12-16 oz of Dr. Pepper

1 Cup of Water

4 Dashes of Worcestershire sauce

3 cloves of garlic


1. Place Pot roast in crock pot

2. Add in all the ingredients

3. Cook for 8 hours on low

4. Serve warm with pan juices over the top


Honey Glazed Baby Carrots


1 lb of baby carrots

1 tsp of kosher salt

4 tbsp butter

4 tbsp honey

3 tbsp brown sugar

Juice of 1/2 lemon

Parsley for garnish


1. Rinse Carrots

2. Place carrots in sauce pan covered in water, with the salt and bring to boil (cook for about 15min)

3. Drain and set aside

4. In a saute pan, melt butter on medium heat, add honey, brown sugar until sugar has dissolved

5. Add in the lemon juice and stir in the carrots

6. Stir until Carrots are glazed and serve garnished with Parsley


Smashed Red Potatoes


2 lbs Small Red Potatoes

6 Tbsp Extra Virgin olive oil (more if needed)

1 tsp thyme leaves

Sea Salt or Kosher and Pepper to taste


1. Preheat oven to 500 degrees

2. Place one over rack at the lowest position and one at the top position

3. Quick steaming method:  Clean potatoes and put inside a pastic grocery bag with a 1/4 C of water

4. Microwave (steam) for 10-15 minutes)

5. When potatoes are done, remove (carefully) – place on baking sheet

6. Brush each potato with olive oil

7. Take a cup and “smash” each potato, and space as you see fit on each baking sheet

8. Feel free to drizzle a olive oil, sprinkle thyme , salt and pepper (and any other of your fave seasonings)

9. Place baking sheets in the oven to cook for 20-25 minutes (until nice and brown)
